Ingredients

Pork

  • 4–6 thick-cut bone-in pork chops
  • 1 tsp salt

  • 1 tbsp olive oil, for searing

Honey Garlic Sauce

  • ½ cup honey
  • ¼ cup low-sodium soy sauce
  • ¼ cup ketchup
  • 4–5 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp grated fresh ginger
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes, optional
  • ½ cup chicken broth

For thickening

  • 1 tbsp cornstarch
  • 2 tbsp cold water

Garnish

  • Fresh parsley or green onions

 Instructions

  1. Season the pork: Pat the chops dry and season both sides with salt, pepper, and garlic powder.
  2. Sear: Heat olive oil in a skillet over medium-high heat. Brown the chops for about 2–3 minutes per side. This step is optional but gives the pork a deeper browned flavor.
  3. Make the sauce: Whisk together honey, soy sauce, ketchup, garlic, vinegar, ginger, onion powder, paprika, red pepper flakes, and chicken broth.
  4. Slow cook: Place the pork chops in the slow cooker and pour the sauce over them.
  5. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until tender and cooked through.
  6. Thicken the glaze: Remove the pork chops. Mix cornstarch with cold water. Stir it into the hot cooking liquid and cook until the sauce becomes glossy and slightly thick.
  7. Return the pork to the sauce and spoon the glaze over the top.
  8. Garnish with parsley or green onions and serve with mashed potatoes, rice, or vegetables.
