A quick, flavorful side dish made with tender-crisp baby bok choy, lots of garlic, fresh ginger, and a spicy savory sauce. It pairs beautifully with rice, noodles, chicken, shrimp, or tofu.
Ingredients
For the Stir-Fry
- 1½ lbs (680 g) baby bok choy
- 1½ tbsp vegetable oil or avocado oil
- 5–6 cloves garlic, finely minced
- 1 tbsp fresh ginger, finely grated
- 1–2 red chilies, thinly sliced
- 2 green onions, sliced
- 1 tsp sesame seeds, for garnish
Spicy Garlic Sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1–2 tsp chili garlic sauce or sriracha
- 1 tsp honey or brown sugar
- 2 tbsp water
- ½ tsp cornstarch
Optional
- ½ tsp crushed red pepper flakes
- 1 tsp chili crisp
- ½ cup sliced mushrooms
- ½ cup thinly sliced bell pepper
- 1–2 tsp toasted sesame seeds
Instructions
1. Prepare the Baby Bok Choy
Trim off the very bottom of each bok choy.
Separate the leaves if they’re large, or cut smaller baby bok choy in half lengthwise.
Wash thoroughly, especially around the base where dirt can collect.
Dry well with a clean towel.
Tip: Keeping the bok choy relatively dry helps it stir-fry instead of steam.
2. Make the Sauce
In a small bowl, whisk together:
- Soy sauce
- Oyster sauce
- Rice vinegar
- Sesame oil
- Chili garlic sauce
- Honey
- Water
- Cornstarch
Mix until the cornstarch is completely dissolved.
Set aside.
3. Heat the Pan
Place a large wok or skillet over medium-high to high heat.
Add the vegetable oil and let it heat until shimmering.
4. Cook the Bok Choy
Add the bok choy to the hot pan.
Stir-fry for approximately 2–3 minutes, tossing frequently.
You want the leaves to begin wilting while the stems remain crisp-tender.
If your bok choy is very large, add the stems first and cook for about 1 minute before adding the leaves.
Transfer the bok choy to a plate temporarily.
5. Cook the Garlic, Ginger & Chili
Add another small splash of oil if the pan looks dry.
Add:
- Minced garlic
- Fresh ginger
- Sliced red chili
Stir-fry for approximately 30–45 seconds.
Be careful not to burn the garlic.
You should smell a strong, fragrant garlic-and-ginger aroma.
6. Add the Sauce
Give the prepared sauce another quick stir because the cornstarch may have settled.
Pour it into the hot pan.
Cook for about 30–60 seconds, stirring constantly, until the sauce becomes glossy and slightly thickened.
7. Return the Bok Choy
Add the cooked bok choy back to the pan.
Toss everything together for 1–2 minutes, making sure the sauce coats the vegetables evenly.
The bok choy should be tender but still have a pleasant crunch.
8. Finish
Turn off the heat.
Add the sliced green onions.
For extra heat, add a little chili crisp or crushed red pepper.
Sprinkle with sesame seeds.
Serve immediately.
🍚 What to Serve With It
This stir-fry works especially well with:
- Steamed jasmine rice
- Brown rice
- Fried rice
- Rice noodles
- Lo mein noodles
- Grilled chicken
- Shrimp
- Salmon
- Crispy tofu
- Beef stir-fry
For a complete meal, add grilled shrimp or chicken and serve over steamed rice.
How to Adjust the Spice
Mild: Use 1 tsp chili garlic sauce and skip the fresh chili.
Medium: Use 1–2 tsp chili garlic sauce plus one sliced chili.
Spicy: Add 1 tbsp chili garlic sauce and fresh chilies.
Extra spicy: Add chili crisp or red pepper flakes as well.
Tips for Perfect Bok Choy
- Use a very hot pan for the best stir-fried flavor.
- Don’t overcrowd the pan. Cook in batches if necessary.
- Keep the stems slightly crisp rather than cooking them until soft.
- Fresh garlic gives the best flavor.
- Add sesame oil near the end so its aroma stays strong.
- Taste the sauce before adding it to the vegetables and adjust the sweetness, saltiness, or heat as needed.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat quickly in a hot skillet or wok for a few minutes. Avoid overcooking because the bok choy can become soft.
Q&A
Can I use regular bok choy?
Yes. Simply cut larger bok choy into smaller pieces and cook the thick stems slightly longer than the leaves.
Can I make it vegetarian?
Absolutely. Replace oyster sauce with vegetarian mushroom stir-fry sauce or additional soy sauce.
Can I make it vegan?
Yes. Use a vegan oyster-style sauce and replace honey with maple syrup or brown sugar.
Can I add protein?
Yes. Shrimp, chicken, tofu, beef, or thinly sliced pork all work well.
Why is my bok choy watery?
The bok choy may have been too wet or the pan may not have been hot enough. Dry the vegetables thoroughly and use a hot, wide skillet or wok.
Can I make this without oyster sauce?
Yes. Use an additional 1 tbsp soy sauce plus ½ tsp brown sugar, or use mushroom stir-fry sauce.
Can I use frozen bok choy?
Fresh baby bok choy is much better for this recipe because it stays crisp. Frozen bok choy can release more water and become softer.
How do I keep the bok choy bright and crisp?
Cook it quickly over high heat and remove it from the pan as soon as the stems become tender-crisp.
