  5. Prepare the eggs: Whisk eggs, milk, oregano, black pepper, and salt in a large bowl until well combined.
  6. Stir in the cooked spinach mixture, red pepper if using, and about ¾ of the feta.
  7. Fill the pan: Divide the mixture evenly between the 12 muffin cups, filling each about ¾ full.
  8. Sprinkle the remaining feta on top.
  9. Bake for 18–22 minutes, until the centers are set and no longer wet. For food safety, the egg mixture should reach 160°F (71°C).
  10. Remove from the oven and let them cool in the pan for 5 minutes, then gently loosen the edges and remove.
