Taco Fiesta Bubble Up Casserole
Ingredients:
- 1 lb ground beef or turkey (you can also use chicken or a vegetarian alternative)
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (8 oz) refrigerated biscuit dough (flaky or buttermilk style works best)
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheese (cheddar or a taco blend)
- 1/4 cup chopped green onions (optional)
- Sour cream and salsa for topping (optional)
- Salt and pepper to taste
Instructions:
- Preheat oven: Set the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the ground meat: In a large skillet, brown the ground beef (or your protein of choice) over medium heat. Drain any excess fat. Stir in the taco seasoning and water, and simmer for 5 minutes until the mixture thickens slightly.
- Add the other ingredients: Stir in the diced tomatoes, corn, and a little salt and pepper to taste. Set aside.
- Prepare the biscuit dough: Open the biscuit dough and cut each biscuit into quarters. Place the dough pieces in the prepared baking dish, spreading them out as evenly as possible.
- Assemble the casserole: Pour the taco meat mixture over the biscuit pieces, spreading it out to cover the dough evenly. Sprinkle the shredded cheese on top.
- Bake: Place the casserole in the oven and bake for about 25-30 minutes, or until the biscuits are golden brown and cooked through.
- Serve: Once baked, remove from the oven and let it cool for a few minutes. Top with chopped green onions, sour cream, and salsa if desired.
