Here’s a traditional Danish Aebleskiver (Stuffed Pancake Balls) Recipe:

Ingredients:

2 cups (250g) all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 cups (480ml) buttermilk (or milk with 1 tablespoon vinegar)
2 eggs, separated
3 tablespoons melted butter (plus more for frying)
1 teaspoon vanilla extract (optional)
Filling (optional): jam, Nutella, or small fruit pieces

Instructions:

1. Prepare Batter:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix buttermilk, egg yolks, melted butter, and vanilla extract.
Slowly combine the wet ingredients with the dry ingredients.
2. Whip Egg Whites:
In another bowl, beat the egg whites until stiff peaks form.
Gently fold the egg whites into the batter to make it fluffy.
3. Heat Aebleskiver Pan:
Place a special aebleskiver pan (or takoyaki pan) on medium heat.
Add a small amount of butter to each well.
4. Cook the Aebleskiver:
Fill each well about ¾ full with batter.
If using filling, place a small amount (e.g., jam or Nutella) in the center and cover with a bit more batter.
5. Turn & Cook Evenly:
When the edges start to set and bubbles form, use a skewer or chopstick to gently turn them 90° and cook on the other side.
Keep rotating until golden brown and cooked through.
6. Serve & Enjoy:
Dust with powdered sugar and serve warm with jam, syrup, or honey.
