Ingredients

  • 1½ cups dry brown or green lentils, rinsed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and cubed
  • 2 celery stalks, diced
  • 1 can (14–15 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt, or to taste
  • 1 bay leaf
  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  • Optional: pinch of red pepper flakes

 Directions

  1. Sauté vegetables: Heat olive oil in a large pot. Add onion, carrots and celery; cook 5–6 minutes until softened.
  2. Add garlic & seasoning: Stir in garlic, oregano, thyme, paprika and red pepper flakes. Cook 30–60 seconds.
  3. Build the soup: Add potatoes, rinsed lentils, diced tomatoes, broth, bay leaf, salt and pepper.
  4. Simmer: Bring to a boil, then reduce heat and cover partially. Simmer 30–35 minutes, stirring occasionally, until the lentils and potatoes are tender.
  5. Add spinach: Stir in spinach and cook 2–3 minutes until wilted.
  6. Finish: Remove the bay leaf. Add lemon juice and parsley. Taste and adjust salt, pepper and lemon.
  7. Serve: Ladle into bowls and serve hot with toasted crusty bread.
