- 1½ cups heavy cream
- ½ cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 tsp Italian seasoning
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan
- 2 tbsp fresh parsley, chopped
Thin, even potato slices help the potatoes cook evenly in the slow cooker.
Instructions
- Grease the slow cooker with butter or cooking spray.
- Whisk together heavy cream, chicken broth, flour, garlic, Italian seasoning, paprika, salt, and pepper.
- Arrange one-third of the potatoes in the slow cooker.
- Add some onion, cheddar, Parmesan, and cream mixture.
- Repeat the layers until everything is used, finishing with cheese and cream.
- Cover and cook on HIGH for 4½–5 hours, until the potatoes are fork-tender and the sauce has thickened.
- Turn off the slow cooker and let the potatoes rest uncovered for 15 minutes so the sauce can thicken further.
- Garnish with fresh parsley and serve warm.
