Salad

Instructions

  1. Prepare the vegetables: Shred the cabbage, slice the cucumbers and red pepper, grate the carrots, and thinly slice the onions.
  2. For a less watery salad, lightly salt the cucumber slices and let them sit for 10 minutes, then pat them dry. This helps the creamy dressing stay thick.
  3. Add cabbage, cucumber, carrots, red pepper, red onion, green onion, dill, and parsley to a large bowl.
  4. In a separate bowl, whisk together mayonnaise, sour cream, vinegar, lemon juice, Dijon, honey, garlic powder, salt, and pepper until smooth.
  5. Pour the dressing over the vegetables.
  6. Gently toss until everything is evenly coated.
  7. Cover and refrigerate for 20–30 minutes so the flavors blend.
  8. Toss once more before serving and garnish with extra dill or parsley.
