  • 3 lb potatoes, peeled and thinly sliced

  • 1½ cups heavy cream
  • ½ cup chicken broth

  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan
  • 2 tbsp fresh parsley, chopped

Thin, even potato slices help the potatoes cook evenly in the slow cooker.

Instructions

  1. Grease the slow cooker with butter or cooking spray.
  2. Whisk together heavy cream, chicken broth, flour, garlic, Italian seasoning, paprika, salt, and pepper.
  3. Arrange one-third of the potatoes in the slow cooker.
  4. Add some onion, cheddar, Parmesan, and cream mixture.
  5. Repeat the layers until everything is used, finishing with cheese and cream.
  6. Cover and cook on HIGH for 4½–5 hours, until the potatoes are fork-tender and the sauce has thickened.
  7. Turn off the slow cooker and let the potatoes rest uncovered for 15 minutes so the sauce can thicken further.
  8. Garnish with fresh parsley and serve warm.
