This recipe is based on the dish in your photo: juicy, browned chicken breasts roasted with blistered cherry tomatoes, zucchini, garlic, herbs, and olive oil.
Serves: 4–5
Prep: 15 minutes
Marinating: 20–30 minutes, optional
Cook: 30–40 minutes
Total: about 1 hour
Ingredients
Chicken
4 boneless, skinless chicken breasts, about 170–200 g each
2½ tbsp olive oil
4 cloves garlic, minced
1 tbsp lemon juice
1 tsp paprika
1 tsp dried Italian seasoning
½ tsp dried oregano
½ tsp dried thyme
½ tsp salt
½ tsp freshly ground black pepper
½ tsp onion powder
¼ tsp chili flakes, optional
Vegetables
2 medium zucchini, sliced into thick rounds
300–350 g cherry or grape tomatoes
1 small red onion, sliced, optional
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp dried oregano
Finishing
1–2 tbsp chopped fresh parsley
1 tbsp lemon juice
1–2 tbsp grated Parmesan, optional
A little extra-virgin olive oil for drizzling
Step-by-step recipe
1. Prepare the chicken
Pat the chicken breasts dry with paper towels. If they’re very thick, gently pound them to an even thickness of roughly 2–2.5 cm.
This helps them cook evenly and prevents the thin portions from becoming dry while the center finishes.
2. Make the garlic-herb marinade
In a bowl, combine:
olive oil
minced garlic
lemon juice
paprika
Italian seasoning
oregano
thyme
salt
pepper
onion powder
chili flakes
Add the chicken and coat thoroughly.
For better flavor, cover and refrigerate for 20–30 minutes. You can also cook it immediately.
3. Prepare the vegetables
Heat your oven to 220°C / 425°F.
Place the zucchini, tomatoes and onion in a large baking dish.
Add olive oil, salt, pepper and oregano and toss everything together.
Spread the vegetables into a reasonably even layer.
4. Brown the chicken
For the attractive caramelized crust shown in your photo, heat a large oven-safe skillet over medium-high heat.
Add a small amount of oil.
Place the chicken in the hot pan and sear for approximately 2–3 minutes per side, until nicely golden.
Don’t worry about cooking the chicken through at this stage—the oven will finish it.
Tip: Don’t overcrowd the pan. If necessary, sear in batches.
5. Assemble
Transfer the browned chicken onto the vegetables.
Tuck some tomatoes and zucchini around the chicken so their juices can mingle during roasting.
Drizzle a little additional olive oil over the top.
6. Roast
Put the dish into the 220°C / 425°F oven.
Roast for approximately 20–30 minutes, depending on the thickness of the chicken.
The important part is the internal temperature rather than the exact cooking time: chicken should reach 165°F / 73.9°C in the thickest portion when measured with a food thermometer.

+1
If the chicken is cooked but you want more browning, switch to the broiler/grill for 1–2 minutes, watching carefully.
7. Finish
Remove from the oven and let the chicken rest for 5 minutes.
Sprinkle generously with fresh parsley.
Finish with lemon juice and, if desired, Parmesan and a drizzle of extra-virgin olive oil.
The roasted tomatoes should be soft and blistered, while the zucchini should have browned edges and remain slightly firm in the center.
Optional creamy garlic version
For a richer version similar to a restaurant-style dish, add after roasting:
60 ml heavy cream
30–40 g Parmesan
1 minced garlic clove
¼ tsp black pepper
Transfer the chicken temporarily to a plate. Put the baking dish juices into a skillet, add cream, garlic and Parmesan, and simmer gently for 2–3 minutes.
Return the chicken and spoon the sauce over it.
Nut information
This recipe contains no nuts by default.
Naturally nut-free
The basic recipe contains:
chicken
zucchini
tomatoes
garlic
herbs
olive oil
lemon
optional Parmesan
None are tree nuts or peanuts.
If you have a nut allergy
Check packaged ingredients such as:
Italian seasoning blends
Parmesan or other processed cheeses
spice mixes
flavored oils
packaged sauces
Also consider cross-contact if the meal is being prepared in a kitchen where nuts are regularly used.
Want to add nuts?
For texture, you could sprinkle toasted almonds, pine nuts, or walnuts over the finished dish—but that would obviously change its allergen status.
Nutrition — approximate
For 1 serving when divided into 4, using chicken breast, olive oil and vegetables, but excluding optional Parmesan:
Nutrient Approx. per serving
Calories 400–470 kcal
Protein 45–52 g
Carbohydrates 12–18 g
Fat 18–23 g
Fiber 3–5 g
Sugar 6–8 g
Actual numbers vary substantially with chicken size and how much oil is absorbed.
What to serve with it
Because the chicken and vegetables already make a complete meal, you don’t need much.
Lower-carb:
green salad
cauliflower rice
steamed broccoli
More substantial:
roasted potatoes
rice
couscous
crusty bread
Mediterranean style:
cucumber salad
hummus
olives
warm pita
Recipe Q&A
Can I use chicken thighs?
Absolutely. Boneless, skinless thighs work particularly well because they’re more forgiving and remain juicy.
Cook until they reach 165°F / 74°C internally.

Can I skip searing?
Yes. Put the seasoned raw chicken directly on the vegetables and roast it. You won’t get quite the same dark, caramelized crust shown in the photo, though.
Why is my chicken dry?
Common causes are:
Want to add nuts?
For texture, you could sprinkle toasted almonds, pine nuts, or walnuts over the finished dish—but that would obviously change its allergen status.
Nutrition — approximate
breasts that are very thin
overcooking
insufficient oil
leaving the chicken in the oven well after reaching its safe temperature
A thermometer is much more reliable than judging doneness by appearance.

Can I use frozen vegetables?
You can, but fresh zucchini and tomatoes will give a better roasted texture. Frozen vegetables also release more water.
Can I prepare this ahead?
Yes. Season the chicken and chop the vegetables several hours ahead, then refrigerate separately until you’re ready to cook.
Can I make it spicy?
Yes. Add:
½–1 tsp chili flakes
½ tsp cayenne
or sliced fresh red chili
Can I add cheese?
Yes. Parmesan, mozzarella, feta, or crumbled goat cheese all work. Add Parmesan during the final few minutes or feta after baking.
Can I make this dairy-free?
Yes. Simply omit the Parmesan.
How do I store leftovers?
Refrigerate leftovers promptly in shallow containers. USDA guidance recommends using cooked poultry leftovers within 3–4 days and reheating leftovers to 165°F / 74°C.

Can I freeze it?
Yes, although the zucchini and tomatoes will become softer after thawing. The chicken freezes better than the roasted vegetables.
How do I get tomatoes like the ones in the picture?
Use cherry or grape tomatoes, coat them lightly in olive oil, and roast at high heat. Don’t overcrowd them. They’ll blister, wrinkle and release sweet juices into the pan.
Why should I not wash the chicken?
Washing raw chicken can spread contaminated juices around the kitchen. The CDC recommends cooking chicken directly and using a thermometer to verify 165°F instead.

Can I make the whole recipe in one pan?
Yes—that’s actually the easiest approach. Use a large oven-safe skillet, sear the chicken, add the vegetables around it, and transfer the whole thing to the oven.
Best trick for matching the photo: use a very hot skillet for the initial chicken sear + high-temperature roasting + fresh parsley and lemon at the end. That combination gives you the deeply browned chicken and glossy, blistered vegetables visible in the picture.
