Thickener

  • 3 tbsp flour
  • 3 tbsp water (for slurry)

 Method

1. Prepare the Chicken

Season chicken pieces with salt, pepper, and paprika.

Heat olive oil in a large pot over medium-high heat.

Brown the chicken pieces for 4–5 minutes until lightly golden. Remove and set aside.

2. Cook the Vegetables

In the same pot, add onion and cook for 2–3 minutes until softened.

Add garlic and cook for another 30 seconds until fragrant.

3. Build the Stew

Add carrots, celery, potatoes, and browned chicken back into the pot.

Stir in tomato paste, thyme, rosemary, Worcestershire sauce, salt, and pepper.

Pour in chicken broth and add the bay leaf.

4. Simmer

Bring the stew to a gentle boil.

Reduce heat, cover, and simmer for 35–40 minutes until:

  • Chicken is tender
  • Potatoes are soft
  • Vegetables are cooked

5. Add Peas & Thicken

Add green peas during the last 5 minutes.

Mix flour and water to create a smooth slurry.

Slowly stir it into the stew and cook for 2–3 minutes until the broth becomes rich and slightly thick.

6. Serve

Remove the bay leaf.

Garnish with fresh thyme or parsley.

Serve hot with crusty bread.
