Ingredients

For the Cauliflower

  • 1 large head cauliflower, cut into florets

  • 3 tablespoons olive oil

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (panko preferred)

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon salt, or to taste

  • ½ teaspoon black pepper

  • 1 tablespoon chopped fresh parsley

  • 1 egg, beaten (optional, for better coating)

For the Creamy Dipping Sauce

  • ½ cup mayonnaise

  • 2 tablespoons sour cream or Greek yogurt

  • 1 teaspoon lemon juice

  • ½ teaspoon garlic powder

  • ½ teaspoon paprika

  • Salt and black pepper, to taste

  • 1 teaspoon hot sauce (optional)

Instructions

  1. Preheat the oven: Heat to 425°F (220°C). Line a baking tray with parchment paper.

  2. Prepare cauliflower: Wash and thoroughly dry the florets. Cut them into bite-sized pieces.

  3. Season: Toss the cauliflower with olive oil, garlic, paprika, garlic powder, onion powder, salt, and pepper.

  4. Add coating: Mix Parmesan and breadcrumbs in a bowl. Dip the florets in beaten egg if using, then coat with the breadcrumb mixture. For an egg-free version, press the coating onto the lightly oiled florets.

  5. Arrange: Spread the florets in a single layer on the tray, leaving space between them.

  6. Roast: Bake for 25–35 minutes, turning halfway through, until golden brown and tender.

  7. Make the sauce: Mix mayonnaise, sour cream, lemon juice, garlic powder, paprika, salt, and pepper until smooth.

  8. Garnish and serve: Sprinkle with fresh parsley and serve immediately with the creamy dipping sauce.

Air fryer option: Cook at 400°F (200°C) for approximately 12–18 minutes, turning halfway through. Cook in batches to help the cauliflower crisp evenly.
