3 cloves garlic, minced
-
1 teaspoon paprika
-
½ teaspoon garlic powder
-
½ teaspoon onion powder
-
½ teaspoon salt, or to taste
-
½ teaspoon black pepper
-
1 tablespoon chopped fresh parsley
-
1 egg, beaten (optional, for better coating)
For the Creamy Dipping Sauce
-
½ cup mayonnaise
-
2 tablespoons sour cream or Greek yogurt
-
1 teaspoon lemon juice
-
½ teaspoon garlic powder
-
½ teaspoon paprika
-
Salt and black pepper, to taste
-
1 teaspoon hot sauce (optional)
Instructions
-
Preheat the oven: Heat to 425°F (220°C). Line a baking tray with parchment paper.
-
Prepare cauliflower: Wash and thoroughly dry the florets. Cut them into bite-sized pieces.
-
Season: Toss the cauliflower with olive oil, garlic, paprika, garlic powder, onion powder, salt, and pepper.
-
Add coating: Mix Parmesan and breadcrumbs in a bowl. Dip the florets in beaten egg if using, then coat with the breadcrumb mixture. For an egg-free version, press the coating onto the lightly oiled florets.
-
Arrange: Spread the florets in a single layer on the tray, leaving space between them.
-
Roast: Bake for 25–35 minutes, turning halfway through, until golden brown and tender.
-
Make the sauce: Mix mayonnaise, sour cream, lemon juice, garlic powder, paprika, salt, and pepper until smooth.
-
Garnish and serve: Sprinkle with fresh parsley and serve immediately with the creamy dipping sauce.
Air fryer option: Cook at 400°F (200°C) for approximately 12–18 minutes, turning halfway through. Cook in batches to help the cauliflower crisp evenly.
