  • Makes: Approximately 10–12 pancakes

  • Difficulty: Easy

Ingredients

For the pancake batter:

  • 1½ cups rolled oats

  • 2 medium apples, peeled and grated

  • 2 large eggs

  • ½ cup milk

  • ½ cup all-purpose flour

  • 2 tablespoons honey or maple syrup

  • 1 teaspoon baking powder

  • ½ teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • A pinch of salt

  • 1 tablespoon melted butter or vegetable oil

For cooking:

– 1–2 tablespoons butter or cooking oil

Optional toppings:

  • Honey or maple syrup

  • Fresh apple slices

  • Ground cinnamon

  • Greek yogurt

  • Fresh berries

  • A little powdered sugar

Instructions

Step 1: Prepare the oats

Place the rolled oats in a blender or food processor.

Pulse until they become a coarse flour-like consistency.

You can also use whole rolled oats for a slightly more textured pancake.

Step 2: Prepare the apples

Wash, peel, and grate the apples using a box grater.

If the apples release too much liquid, gently squeeze out a little excess juice.

Keep some moisture in the apples to help make the pancakes soft.

Step 3: Mix the wet ingredients

In a large mixing bowl, add the eggs, milk, honey, and vanilla extract.

Whisk until everything is well combined.

Add the grated apples and melted butter.

Stir gently.

Step 4: Add the dry ingredients

Add the ground oats, all-purpose flour, baking powder, cinnamon, and salt.

Mix until a thick pancake batter forms.

Do not overmix.

Step 5: Rest the batter

Allow the batter to rest for approximately 5–10 minutes.

This gives the oats time to absorb moisture and helps create soft, fluffy pancakes.

If the batter becomes too thick, add 1–2 tablespoons of milk.

Step 6: Heat the skillet

Place a nonstick skillet or frying pan over medium-low heat.

Lightly grease the surface with butter or cooking oil.

Allow the pan to heat gently.

Step 7: Cook the pancakes

Scoop approximately ¼ cup of batter onto the skillet for each pancake.

Spread gently into a round shape.

Cook for approximately 2–3 minutes until small bubbles appear on the surface and the edges begin to set.

Step 8: Flip the pancakes

Carefully flip each pancake using a spatula.

Cook the other side for another 2–3 minutes until golden brown and completely cooked through.

Repeat with the remaining batter.

Step 9: Keep them warm

Transfer the cooked pancakes to a serving plate.

Cover loosely with foil while preparing the remaining pancakes.

Step 10: Serve and enjoy

Stack the warm pancakes on a plate.

Drizzle with honey or maple syrup.

Add fresh apple slices and a sprinkle of cinnamon.

Serve immediately for a delicious homemade breakfast!
