Ingredients
For the apples:
– 4 medium apples
– 2 tablespoons butter
– 2 tablespoons brown sugar
– ½ teaspoon ground cinnamon
– 1 teaspoon lemon juice
For the creamy cake batter:
– 3 large eggs
– ¾ cup granulated sugar
– 1 cup all-purpose flour
– 1 cup milk
– ½ cup heavy cream
– 2 tablespoons melted butter
– 1 teaspoon vanilla extract
– 1½ teaspoons baking powder
– A pinch of salt
For decoration:
– 2 tablespoons powdered sugar
– A little extra ground cinnamon (optional)
Instructions
Step 1: Prepare the apples
Wash, peel, and core the apples.
Cut them into medium-sized wedges or thin slices.
Place the apple slices in a bowl and add lemon juice, brown sugar, and cinnamon.
Toss gently until all the apples are coated.
Step 2: Cook the apples
Place a large nonstick skillet over medium heat.
Add 2 tablespoons butter and allow it to melt.
Add the seasoned apple slices.
Cook for approximately 5–7 minutes, stirring gently, until the apples begin to soften and turn slightly golden.
Remove from heat and set aside.
Step 3: Prepare the creamy batter
In a large mixing bowl, add the eggs and granulated sugar.
Whisk for approximately 2–3 minutes until pale and slightly fluffy.
Add the milk, heavy cream, melted butter, and vanilla extract.
Whisk until smooth.
Step 4: Add the dry ingredients
In a separate bowl, combine the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture.
Whisk gently until you have a smooth, creamy batter without lumps.
Avoid overmixing.
Step 5: Prepare the baking pan
Preheat your oven to 350°F (175°C).
Grease a 9-inch round cake pan with butter.
Line the bottom with parchment paper if desired.
Step 6: Arrange the apples
Spread the cooked apple slices evenly across the bottom of the prepared pan.
Arrange some slices in a circular pattern for a beautiful presentation.
Step 7: Pour the creamy batter
Slowly pour the prepared creamy batter over the apples.
Use a spatula to distribute the batter evenly.
Make sure the apples are covered with the mixture, while allowing some slices to remain visible on top if desired.
Step 8: Bake the cake
Place the cake pan in the preheated oven.
Bake for approximately 40–50 minutes, until the top becomes golden brown and the center is set.
Insert a toothpick into the cake portion. It should come out without wet batter.
If the top browns too quickly, loosely cover with aluminum foil.
Step 9: Cool the cake
Remove the cake from the oven.
Allow it to cool in the pan for 20–30 minutes.
This helps the creamy center firm up and makes slicing easier.
Step 10: Decorate and serve
Carefully remove the cake from the pan.
Dust generously with powdered sugar.
Add a light sprinkle of cinnamon if desired.
Slice and serve warm or chilled.
Enjoy the delicious combination of tender apples and creamy cake!
