Preparation & Cooking Time
– Preparation time: 15 minutes
– Cooking time: 4–5 hours on LOW or 2½–3½ hours on HIGH
– Total time: Approximately 4½–5½ hours
– Servings: 6 people
– Difficulty: Easy
Ingredients
For the chicken:
– 6 bone-in, skin-on chicken thighs
– 2 tablespoons olive oil
– 2 tablespoons unsalted butter
– 3 large yellow onions, thinly sliced
– 4 cloves garlic, minced
– 1½ cups chicken broth
– 2 tablespoons Worcestershire sauce
– 1 tablespoon soy sauce
– 1 tablespoon all-purpose flour (optional, for thickening)
For seasoning:
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– ½ teaspoon dried thyme
– ½ teaspoon dried rosemary
– ½ teaspoon black pepper
– ¾ teaspoon salt, or to taste
– 1 teaspoon dried parsley
Optional finishing ingredients:
– 1 cup shredded mozzarella cheese
– ½ cup shredded Swiss or Gruyère cheese
– Fresh parsley for garnish
– 1 teaspoon cornstarch mixed with 1 tablespoon cold water, if needed
Instructions
Step 1: Prepare the chicken

Pat the chicken thighs dry with paper towels.

In a small bowl, combine garlic powder, onion powder, paprika, thyme, rosemary, black pepper, and salt.

Sprinkle the seasoning mixture evenly over both sides of the chicken thighs.

Step 2: Brown the chicken

Heat olive oil in a large skillet over medium-high heat.

Place the chicken thighs skin-side down and cook for approximately 5–7 minutes until the skin becomes golden brown.

Turn and brown the other side for another 3–4 minutes.

Transfer the chicken to a plate.

Tip: Browning adds extra flavor and helps develop a beautiful golden color.

Step 3: Caramelize the onions

In the same skillet, add butter and sliced onions.

Cook over medium heat for approximately 8–12 minutes, stirring occasionally.

Allow the onions to soften and develop a golden-brown color.

Add minced garlic and cook for another 30 seconds.

Step 4: Prepare the savory onion sauce

Pour chicken broth into the skillet.

Add Worcestershire sauce, soy sauce, and dried parsley.

Stir gently, scraping the bottom of the pan to release all the flavorful browned bits.

If using flour, whisk it into a little cool broth first to avoid lumps, then stir it into the sauce.

Step 5: Arrange everything in the crockpot

Spread half of the caramelized onions across the bottom of the slow cooker.

Arrange the browned chicken thighs on top.

Spoon the remaining onions over the chicken.

Pour the prepared broth mixture around the chicken.

Step 6: Slow cook the chicken

Cover the slow cooker with its lid.

Cook until the chicken is tender and thoroughly cooked:
– LOW: 4–5 hours.
– HIGH: 2½–3½ hours.
Cooking times vary depending on the size of the chicken thighs and your slow cooker.

The chicken should reach an internal temperature of 165°F (74°C) at the thickest part, away from the bone.

Step 7: Prepare the gravy

Carefully remove the cooked chicken and place it on a serving plate.

If the onion gravy is too thin, transfer it to a saucepan and simmer until reduced.

Alternatively, stir in a cornstarch slurry and cook until thickened.

Step 8: Add cheese (optional)

For a cheesy French onion finish, sprinkle mozzarella and Swiss or Gruyère cheese over the chicken.

Place under a broiler briefly until the cheese melts and becomes golden.

Alternatively, cover the chicken in the slow cooker and allow the cheese to melt.

Step 9: Final touch

Spoon plenty of caramelized onion gravy over the chicken.

Sprinkle with fresh parsley.

Step 10: Serve and enjoy!

Serve hot with mashed potatoes, rice, roasted vegetables, or crusty bread.

Enjoy the tender chicken and rich, savory onion gravy!
