Pastina Soup Recipe
Ingredients:
1 cup pastina (small pasta)
4 cups chicken or vegetable broth
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional)
Directions:
In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until the vegetables are tender, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken or vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer. Season with salt and pepper to taste.
Add the pastina to the pot and cook according to the package instructions, usually around 5-7 minutes, until the pasta is al dente.
Once the pastina is cooked, remove the bay leaf and ladle the soup into bowls. Garnish with fresh parsley and sprinkle with grated Parmesan cheese if desired.
Serve hot and enjoy this comforting bowl of pastina soup.
