- 2 medium zucchini, diced

- ½ tsp paprika
- Salt & black pepper, to taste
- Zest of ½ lemon
- 1 tbsp lemon juice
Rice
- 1½ cups long-grain white rice
- 3 cups water or broth
- ½ tsp salt

- Crumbled feta cheese
- Cherry tomatoes, halved
- Cucumber, diced
- Fresh parsley or dill

👩🍳 Instructions
1️⃣ Cook the Rice
- Rinse rice until water runs clear
- Combine rice, water/broth, and salt
- Bring to boil, cover, reduce heat, and simmer 15 minutes
- Fluff and set aside
2️⃣ Cook Beef
- Heat olive oil in a large skillet over medium heat

- Add ground beef, breaking it up

- Finish with lemon zest and lemon juice

- Spoon rice into bowls
- Top with beef-zucchini mixture
