🛒 Ingredients (Serves 3–4)

Main:

  • 1–1.5 lb pork tenderloin
  • 2 apples (sliced, Fuji or Honeycrisp work best)
  • 1½ cups green beans (trimmed)
  • 2 carrots (sliced)
  • 1 small red onion (optional)

Balsamic glaze:

  • 3 tbsp balsamic vinegar
  • 1½ tbsp olive oil
  • 1 tbsp honey (or maple syrup)
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • ½ tsp dried thyme or rosemary
  • Salt & black pepper to taste

  1. Preheat oven
    Set to 200°C (400°F).
  2. Mix the glaze
    Whisk balsamic vinegar, olive oil, honey, garlic, Dijon, herbs, salt, and pepper.
  3. Prep everything
    • Place pork in the center of a sheet pan
    • Arrange apples, green beans, and carrots around it
    • Drizzle half the glaze over pork and veggies
  4. Roast
    Bake for 20–25 minutes, turning veggies halfway through.
  5. Glaze & finish
    Brush remaining glaze over pork and roast another 5–10 minutes until internal temp reaches 63°C (145°F).
  6. Rest & slice
    Let pork rest 5 minutes before slicing.
