Main:
- 1–1.5 lb pork tenderloin
- 2 apples (sliced, Fuji or Honeycrisp work best)
- 1½ cups green beans (trimmed)
- 2 carrots (sliced)

Balsamic glaze:
- 3 tbsp balsamic vinegar
- 1½ tbsp olive oil
- 1 tbsp honey (or maple syrup)
- 2 garlic cloves, minced
- 1 tsp Dijon mustard
- ½ tsp dried thyme or rosemary
- Salt & black pepper to taste

- Preheat oven
Set to 200°C (400°F). - Mix the glaze
Whisk balsamic vinegar, olive oil, honey, garlic, Dijon, herbs, salt, and pepper. - Prep everything
- Place pork in the center of a sheet pan
- Arrange apples, green beans, and carrots around it
- Drizzle half the glaze over pork and veggies
- Roast
Bake for 20–25 minutes, turning veggies halfway through. - Glaze & finish
Brush remaining glaze over pork and roast another 5–10 minutes until internal temp reaches 63°C (145°F). - Rest & slice
Let pork rest 5 minutes before slicing.
