Preheat oven to 425°F (220°C). Place each potato between two wooden spoons or chopsticks and slice thinly without cutting through.

Mix olive oil/butter with garlic, salt, pepper, paprika, and herbs. Brush generously over potatoes, working oil into the slices.
3️⃣ Bake
Place on lined baking sheet. Cover loosely with foil and bake 25 minutes. Remove foil, brush again, and bake another 15–20 minutes until crispy edges and tender centers.
4️⃣ Finish
Sprinkle with cheese if using and bake 2 more minutes. Garnish with parsley and serve.
