Bourbon Chicken with Broccoli

Ingredients (Serves 4)

  • For the chicken:
    • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
    • 1 tbsp olive oil
  • For the sauce:
    • 1/4 cup low-sodium soy sauce
    • 1/4 cup water
    • 2 tbsp honey (or a sugar-free alternative)
    • 2 tbsp apple cider vinegar
    • 2 garlic cloves, minced
    • 1/2 tsp ground ginger
    • 1/4 tsp red pepper flakes (optional, for a kick)
    • 1 tbsp cornstarch + 2 tbsp water (for thickening)
  • For the broccoli:
    • 2 cups broccoli florets, steamed or stir-fried

Instructions

  1. Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken and cook until golden and cooked through (about 5-7 minutes). Remove and set aside.
  2. Make the Sauce:
    • In the same skillet, add soy sauce, water, honey, apple cider vinegar, garlic, ginger, and red pepper flakes.
    • Bring to a simmer.
  3. Thicken the Sauce:
    • Mix cornstarch and water in a small bowl. Slowly stir it into the sauce. Cook until thickened (2-3 minutes).
  4. Combine:
    • Add the cooked chicken back into the skillet and toss to coat with the sauce. Simmer for another 2 minutes.
  5. Serve with Broccoli:
    • Plate the chicken with steamed or stir-fried broccoli on the side or mix them together.
