Bourbon Chicken with Broccoli
Ingredients (Serves 4)
- For the chicken:
- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- For the sauce:
- 1/4 cup low-sodium soy sauce
- 1/4 cup water
- 2 tbsp honey (or a sugar-free alternative)
- 2 tbsp apple cider vinegar
- 2 garlic cloves, minced
- 1/2 tsp ground ginger
- 1/4 tsp red pepper flakes (optional, for a kick)
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
- For the broccoli:
- 2 cups broccoli florets, steamed or stir-fried
Instructions
- Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Add the chicken and cook until golden and cooked through (about 5-7 minutes). Remove and set aside.
- Make the Sauce:
- In the same skillet, add soy sauce, water, honey, apple cider vinegar, garlic, ginger, and red pepper flakes.
- Bring to a simmer.
- Thicken the Sauce:
- Mix cornstarch and water in a small bowl. Slowly stir it into the sauce. Cook until thickened (2-3 minutes).
- Combine:
- Add the cooked chicken back into the skillet and toss to coat with the sauce. Simmer for another 2 minutes.
- Serve with Broccoli:
- Plate the chicken with steamed or stir-fried broccoli on the side or mix them together.
