Ingredients (Serves 8)

  • 2 cups nonfat plain Greek yogurt
  • 1 package (1 oz) sugar-free, fat-free cheesecake pudding mix (instant)
  • 1 tsp vanilla extract
  • 2 large egg whites

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix Ingredients:
    • In a large bowl, whisk together Greek yogurt, pudding mix, vanilla extract, and egg whites until smooth.
  3. Prepare the Pan:
    • Spray a 9-inch springform or pie pan with nonstick cooking spray.
  4. Bake:
    • Pour the mixture into the prepared pan and smooth the top.
    • Bake for 30-35 minutes or until the edges are set and the center is slightly jiggly.
  5. Cool & Chill:
    • Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight for the best texture.
  6. Serve:
    • Slice and enjoy as is, or top with fresh fruit, a sprinkle of cinnamon, or a drizzle of zero-calorie syrup.
