Caribbean Mahi Mahi with Sweet Potato Hash
Ingredients:
For the Mahi Mahi:
- 4 Mahi Mahi fillets (about 4 oz each)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 1 tbsp lime juice
For the Sweet Potato Hash:
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 tbsp olive oil
- 1/2 red bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Prepare the Mahi Mahi:
- Preheat the grill or a skillet over medium heat.
- In a small bowl, combine garlic powder, paprika, cumin, turmeric, cayenne pepper, salt, and pepper.
- Rub the spice mixture evenly over the Mahi Mahi fillets.
- Drizzle with olive oil and lime juice.

- Season with garlic powder, salt, and pepper. Garnish with fresh cilantro.
- Assemble:
- Serve the grilled Mahi Mahi on top of the sweet potato hash and enjoy!
