1 tablespoon sesame seeds (optional)
Instructions
Step 1: Prepare the vegetables
Heat 2 tablespoons of butter or olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes until softened.
Add the garlic and cook for another 30 seconds. Stir in the shredded cabbage, grated carrot, capsicum, and spinach, if using.
Season with salt, black pepper, paprika, and oregano. Cook for 5–7 minutes, stirring occasionally, until the vegetables soften and excess moisture evaporates. Remove from the heat and let cool slightly.
Step 2: Make the creamy cheese sauce
Melt 2 tablespoons of butter in a saucepan over medium-low heat. Add the flour and whisk for about 1 minute.
Gradually pour in the milk while whisking continuously to prevent lumps. Cook for 3–5 minutes until the sauce thickens.
Stir in the cooking cream, garlic powder, salt, pepper, and grated cheese. Mix until smooth and creamy.
Allow the sauce to cool for a few minutes before assembling.
Step 3: Combine the filling
Place the cooked vegetables in a large bowl. Add the mozzarella and cheddar cheese, then mix gently.
Add about half of the creamy sauce and stir until the vegetables are coated. Keep the remaining sauce for drizzling over the filling or serving alongside the bake.
Tip: The filling should be creamy but not watery. If the vegetables release liquid, drain the excess before assembling.
Step 4: Prepare the baking dish
Preheat your oven to 200°C (400°F).
Lightly grease a rectangular baking dish, approximately 9 × 13 inches (23 × 33 cm).
Spread the vegetable-and-cheese mixture evenly in the dish.
Step 5: Add the puff pastry
Unfold the thawed puff pastry sheets on a lightly floured surface. Join or slightly overlap them as needed to cover the baking dish.
Lay the pastry over the vegetable filling. Trim any excess pastry and gently tuck the edges around the sides.
Cut a few small slits in the pastry to allow steam to escape. Brush the surface with the beaten egg and milk mixture, then sprinkle with dried herbs and sesame seeds, if desired.
Step 6: Bake until golden
Place the dish in the preheated oven and bake for 25–35 minutes, or until the pastry is puffed and deeply golden and the filling is hot.
If the pastry browns too quickly, loosely cover the top with foil for the remaining baking time.
For the best results, make sure the pastry is fully cooked on the underside as well as the top.
Step 7: Add the finishing sauce
Remove the dish from the oven and allow it to rest for 10 minutes.
Warm the remaining creamy cheese sauce gently. Drizzle a little over the top if you want the creamy appearance shown in the first part of the picture, or serve it on the side.
Step 8: Cut and serve
Cut the bake into even squares using a sharp knife. Sprinkle with fresh parsley or dried herbs.
Serve warm while the pastry is crisp, the cheese is melted, and the vegetable filling is creamy.
Tips for the best results
-
Avoid soggy pastry: Cook the vegetables until most of their moisture has evaporated.
-
Keep the pastry cold: Work quickly after thawing so it puffs up nicely in the oven.
-
Make it extra cheesy: Add a little Parmesan to the filling.
-
Add protein: Cooked shredded chicken or chickpeas can make it more filling.
-
For neat squares: Let the bake rest before cutting and serving.
Storage
-
Refrigerator: Store leftovers in an airtight container for up to 3 days.
-
Reheating: Bake at 180°C (350°F) for 10–15 minutes until hot and crisp.
-
Freezing: Freeze the cooked filling separately for better texture. Puff pastry is best baked fresh.
Frequently Asked Questions
1. Can I use ready-made puff pastry?
Yes. Store-bought puff pastry works perfectly and saves preparation time.
2. Can I make this without cream?
Yes. Replace the cream with additional milk, or use a little extra cheese for richness.
3. Can I use different vegetables?
Absolutely. Mushrooms, broccoli, zucchini, sweet corn, and finely chopped cooked potatoes are good alternatives. Cook watery vegetables first to remove excess moisture.
4. Can I prepare it ahead of time?
You can prepare the vegetable filling and sauce a day ahead and refrigerate them separately. Assemble with cold puff pastry shortly before baking for the best rise and crispness.
5. How do I know when it’s ready?
The pastry should be puffed and golden brown, and the filling should be bubbling around the edges.
Enjoy your golden, flaky, creamy vegetable pastry bake!
