– 2 medium potatoes
– 1 medium carrot
– ½ cup shredded mozzarella cheese
– ¼ cup shredded cheddar cheese
– 1 egg
– ½ cup breadcrumbs
– 2 tablespoons all-purpose flour
– 2 tablespoons chopped fresh parsley
– 2 tablespoons chopped green onions
– ½ teaspoon garlic powder
– ½ teaspoon onion powder
– ½ teaspoon black pepper
– ¾ teaspoon salt, or to taste
– ½ teaspoon paprika
For the cheesy filling
– ½ cup mozzarella cheese sticks or shredded mozzarella
– 2 tablespoons Parmesan cheese (optional)
For coating and frying
– ½ cup breadcrumbs
– ¼ cup all-purpose flour
– 2–3 tablespoons cooking oil
Step-by-Step Instructions
Step 1: Prepare the zucchini
Wash the zucchini thoroughly.

Trim off both ends and grate using a medium grater.

Place the grated zucchini in a clean kitchen towel.

Squeeze firmly to remove as much excess water as possible.

Important: Removing excess moisture helps the rolls hold their shape and become crispy.
Step 2: Prepare the potatoes
Peel and wash the potatoes.

Grate them using a medium grater.

Place the grated potatoes in cold water for a few minutes to remove excess starch.

Drain thoroughly and squeeze out all remaining moisture using a clean kitchen towel.
Step 3: Prepare the carrots
Wash, peel, and finely grate the carrot.

Set aside.

The carrots add natural sweetness, beautiful orange color, and extra nutrients.
Step 4: Combine the vegetables
Place the prepared zucchini, potatoes, and carrots in a large mixing bowl.

Add the shredded mozzarella and cheddar cheese.

Mix gently until everything is evenly distributed.
Step 5: Add seasonings
Add:
– Salt
– Black pepper
– Garlic powder
– Onion powder
– Paprika
– Fresh parsley
– Green onions
Mix everything together.
Step 6: Add binding ingredients
Add one egg, breadcrumbs, and all-purpose flour.

Mix until the ingredients form a thick, slightly sticky mixture.

If the mixture feels too wet, add another tablespoon of breadcrumbs.

If it feels too dry, add a little beaten egg.
Step 7: Prepare the cheese filling
Cut mozzarella cheese into small strips.

These will create a delicious melted cheese center inside each roll.
Step 8: Shape the rolls
Take approximately 2 tablespoons of vegetable mixture.

Flatten it gently in your palm.

Place a small piece of mozzarella in the center.

Carefully wrap the mixture around the cheese.

Shape into small oval cylinders, similar to the rolls shown in the picture.

Seal the edges properly so the cheese does not escape during cooking.

Repeat with the remaining mixture.
Step 9: Coat the rolls
Place breadcrumbs on a flat plate.

Lightly roll each vegetable cylinder in breadcrumbs.

Dust lightly with flour if necessary to help the coating stick.

Arrange the prepared rolls on a tray.
Step 10: Chill before cooking
Place the shaped rolls in the refrigerator for 15–20 minutes.

This helps them become firm and makes frying easier.
Step 11: Heat the oil
Heat 2–3 tablespoons of cooking oil in a nonstick frying pan over medium heat.

Do not allow the oil to become excessively hot.
Step 12: Fry the rolls
Carefully place the vegetable rolls into the hot pan.

Leave enough space between them.

Cook for approximately 3–4 minutes on each side.

Turn gently using a spatula or tongs.

Continue cooking until all sides become beautifully golden brown and crispy.
Step 13: Drain excess oil
Transfer the cooked rolls onto a plate lined with paper towels.

Allow excess oil to drain.
Step 14: Serve hot
Arrange the crispy rolls on a serving plate.

Cut one roll open to reveal the melted mozzarella center.

Serve immediately while warm and crispy.
