🛒 Ingredients (Serves 3–4)

Main:

  • 4–6 chicken thighs or drumsticks (bone-in, skin-on)
  • 1 lb baby potatoes (halved)
  • 1½ cups green beans (trimmed)

Herb marinade:

  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • ½ tsp oregano
  • ½ tsp paprika
  • Salt & black pepper
  • Juice of ½ lemon

  1. Preheat oven
    Set to 200°C (400°F).
  2. Make the marinade
    Mix olive oil, garlic, herbs, paprika, lemon juice, salt, and pepper.
  3. Prep chicken & potatoes
    Toss chicken and potatoes with most of the marinade.
  4. Roast (first stage)
    Spread chicken and potatoes on a sheet pan.
    Roast for 25–30 minutes.
  5. Add green beans
    Toss green beans with remaining marinade, add to pan, and roast another 10–15 minutes.
  6. Finish
    Broil 2–3 minutes for crispy skin (optional). Rest briefly before serving.
