Ingredients

  • 8 slices soft white or whole-wheat bread

  • 1 large cucumber, thinly sliced

  • 1/2 cup cream cheese, softened

  • 1 tbsp mayonnaise (optional, for extra creaminess)

  • 1 tsp lemon juice or white vinegar

  • Salt & black pepper, to taste

  • 1 tbsp fresh dill or parsley, finely chopped (optional)

  • Butter (optional, for bread)


Instructions

  1. Prep cucumbers
    Thinly slice cucumber. Lightly sprinkle with salt and let sit for 5 minutes. Pat dry with paper towel to remove excess moisture.

  2. Make spread
    In a bowl, mix cream cheese, mayonnaise (if using), lemon juice, salt, pepper, and herbs until smooth.

  3. Assemble
    Lightly butter bread slices (optional). Spread cream cheese mixture evenly on each slice.

  4. Layer cucumbers
    Arrange cucumber slices in a single layer. Add extra pepper if desired.

  5. Finish & cut
    Top with remaining bread slices. Trim crusts if preferred and cut into triangles or fingers.


Tips for Best Flavor

  • Use English or Persian cucumbers for fewer seeds

  • Add a pinch of garlic powder or chives for extra taste

  • For a lighter version, use Greek yogurt instead of mayo
