 Instructions

1. Cook the potatoes

Place baby potatoes in a pot of salted water and boil for 12–15 minutes, or until fork-tender but not falling apart.

Drain well and allow them to steam-dry for a few minutes.

2. Smash the potatoes

Transfer potatoes to a lined baking tray. Gently press each potato with the bottom of a glass or measuring cup until flattened.

Drizzle with olive oil and season with oregano, paprika, garlic powder, salt and black pepper.

3. Add chickpeas

Pat the chickpeas very dry with paper towels. Spread them around the potatoes and lightly coat with a little olive oil and seasoning.

4. Roast until crispy

Bake at 425°F (220°C) for about 30–35 minutes, turning the chickpeas once halfway through.

5. Prepare the dressing
