2. Full cooking instructions
Step 1 — Cook the rice
-
Rinse the rice under cold water until the water runs mostly clear.
-
Add the rice and chicken broth to a saucepan with a pinch of salt.
-
Bring to a boil, then cover and reduce the heat to low.
-
Cook for approximately 15–18 minutes, or according to the package directions.
-
Turn off the heat and let the rice rest, covered, for 5 minutes. Fluff with a fork.
Step 2 — Brown the sausage
-
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
-
Add the sliced sausage in a single layer.
-
Cook for 4–6 minutes, turning occasionally, until browned on both sides.
-
Transfer to a plate. If using raw sausage rather than fully cooked smoked sausage, cook it thoroughly according to its type before proceeding.
Step 3 — Sauté the vegetables
-
Add the remaining olive oil to the same skillet.
-
Add the onion and bell peppers. Cook for 3–4 minutes until they begin to soften.
-
Add the zucchini and cook for another 3–4 minutes.
-
Stir in the garlic, paprika, Italian seasoning, black pepper, and a little salt.
-
Add the cherry tomatoes and cook for 2–3 minutes until softened but not completely mushy.
Step 4 — Combine sausage and vegetables
-
Return the browned sausage to the skillet.
-
Stir everything together and cook for another 2–3 minutes so the flavors combine.
-
Taste and adjust the seasonings.
-
Sprinkle with fresh parsley or dill.
Step 5 — Assemble the bowls
-
Divide the fluffy rice among four serving bowls.
-
Spoon the sausage and vegetables over the rice.
-
Drizzle with a little olive oil or add a squeeze of lemon juice if desired.
-
Serve hot.
Optional: For a one-pan version, cook the sausage and vegetables first, then stir in cooked rice and heat everything together for 2–3 minutes.
