Parmesan Crusted Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts, butterflied into 2 or 3 pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (such as basil, oregano, thyme)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

Instructions:

  1. Prepare the Chicken:
    • Butterfly each chicken breast into 2 or 3 pieces, depending on the size.
    • Place the chicken between plastic wrap and gently pound them to an even thickness.
    • Season both sides with garlic powder, dried herbs, salt, and pepper.
  2. Coat with Parmesan:
    • Coat one side of each chicken piece with grated Parmesan cheese, pressing it onto the chicken to adhere.
  3. Cooking:
    • Heat olive oil in a skillet over medium-high heat.
    • Place the chicken in the skillet, Parmesan side down, and cook until it forms a golden crust (approximately 3-4 minutes).
    • Flip the chicken, reduce the heat to medium, and add butter to the skillet.
    • Continue cooking until the chicken is cooked through, and the internal temperature reaches 165°F (74°C).
  4. Serve:
    • Transfer the chicken to a plate, allowing it to rest for a few minutes before serving.
