Ingredients

Chicken and beans

  • 6 bone-in or boneless chicken thighs (about 2–2½ lb / 900 g–1.1 kg)

  • 2 cans (15 oz / 425 g each) pinto beans, drained and rinsed

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 1 cup (240 ml) low-sodium chicken broth

  • 1 can (14.5 oz / 411 g) diced tomatoes, optional

Seasonings

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp ground cumin

  • ½ tsp dried oregano

  • ½ tsp black pepper

  • ½ tsp salt, or to taste

  • 1 tbsp olive oil, optional

  • 1 tbsp lime juice, optional

  • 2 tbsp chopped fresh cilantro, optional

Instructions

1. Prepare the chicken

Pat the chicken thighs dry with paper towels. Season both sides with paprika, garlic powder, onion powder, cumin, oregano, salt, and black pepper.

2. Prepare the beans

Drain and rinse the canned pinto beans. Dice the onion and mince the garlic.

Important: Use canned beans or beans that have already been fully cooked. Do not put raw dried pinto beans directly into a slow cooker.

3. Layer the slow cooker

Spread the onion and garlic over the bottom of the slow cooker. Add the pinto beans and optional diced tomatoes, then pour in the chicken broth.

4. Add the chicken

Arrange the seasoned chicken thighs over the beans. Drizzle with olive oil if desired. The chicken can sit partly above the beans; it does not need to be completely submerged.

5. Slow cook

Cover and cook on LOW for 4–6 hours or HIGH for approximately 3–4 hours, until the chicken is fully cooked and tender. Cooking times vary by appliance and chicken size.

Check the thickest part of each piece with a food thermometer. Chicken must reach 165°F (74°C).

6. Finish the dish

Stir the beans gently and taste the broth. Add lime juice and fresh cilantro if desired. If the mixture is too thin, transfer some liquid to a saucepan and simmer until reduced, or mash a few beans to thicken it.

7. Serve

Spoon the beans into bowls and top with chicken. Serve with rice, cornbread, tortillas, or steamed vegetables.

  3. Place the chicken thighs on top.

  4. Cover and cook on LOW for 4–6 hours or HIGH for 3–4 hours.

  5. Verify the chicken reaches 165°F (74°C).

  6. Finish with lime juice and cilantro, then serve warm.

Tips for the Best Results

  • Use chicken thighs: They tend to stay moist during slow cooking.

  • Choose canned beans: They are convenient and safe to add directly to the slow cooker.

  • Avoid too much liquid: The chicken and vegetables release moisture as they cook.

  • Add brightness: Lime juice and cilantro balance the rich, savory flavors.

  • Make it spicy: Add chili powder or diced jalapeño if desired.

Storage and Food Safety

  • Refrigerate leftovers in shallow, airtight containers within 2 hours.

  • Store in the refrigerator for 3–4 days.

  • Reheat until the chicken and beans reach 165°F (74°C) throughout.

  • Freeze in meal-sized portions for up to 2–3 months for best quality.

  • Thaw in the refrigerator before reheating.

Recipe Q&A

Can I use chicken breasts? Yes. They work well, but may dry out if overcooked. Check the internal temperature and remove them once they reach 165°F (74°C).

Can I use dried pinto beans? Only after properly soaking and fully cooking them separately. Raw or undercooked kidney beans are especially hazardous, and some other dried beans also require thorough boiling before use.

Can I add vegetables? Yes. Bell peppers, corn, and diced carrots work well.

Can I make it without tomatoes? Absolutely. Use chicken broth, beans, onions, garlic, and seasonings for a simpler savory version.
