Ingredients

  • 2½–3 lb (1.1–1.4 kg) beef chuck roast

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 1 cup beef broth

  • 4 oz (115 g) cream cheese

  • ½ cup heavy cream

  • ½ cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese

  • 2 tbsp butter

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • 1 tsp salt, or to taste

  • 1 tbsp chopped fresh parsley

Instructions

1. Prepare the beef: Pat the chuck roast dry with paper towels. Season all sides with salt, black pepper, paprika, garlic powder, onion powder, and Italian seasoning.

2. Sear the roast: Heat olive oil in a skillet over medium-high heat. Sear the beef for 3–4 minutes per side until deeply browned. This step adds flavor.

3. Prepare the slow cooker: Spread the sliced onion and minced garlic across the bottom of the slow cooker. Place the browned beef on top.

4. Add the broth: Pour the beef broth around the roast. Add the butter on top of the beef.

5. Slow-cook: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender and easy to shred. Avoid lifting the lid frequently.

6. Shred the beef: Transfer the cooked roast to a large plate. Use two forks to shred it into bite-sized pieces, removing any large pieces of fat.

7. Make the creamy sauce: Whisk the softened cream cheese and heavy cream together until smooth. Stir in the Parmesan and mozzarella cheeses.

8. Combine everything: Return the shredded beef to the slow cooker. Stir the creamy cheese mixture into the cooking juices until the beef is coated in a rich, creamy garlic Parmesan sauce.

9. Finish cooking: Cover and cook on LOW for another 15–25 minutes, stirring occasionally, until the cheese has melted and the sauce is smooth. If the sauce is too thick, add a little warm beef broth.

10. Garnish and serve: Sprinkle with fresh parsley and extra Parmesan cheese. Serve hot over mashed potatoes, rice, egg noodles, or pasta.
