- Total Time: About 8 hours
- Servings: 6–8
- Difficulty: Easy
Ingredients
For the Roast
- 3–4 lb beef chuck roast
- 1 large onion, sliced
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup beef broth
Garlic Herb Sauce
- ¼ cup olive oil
- 2 tbsp Worcestershire sauce
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 1 tbsp balsamic vinegar
- 1 tbsp honey or brown sugar
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried parsley
- 1 tsp paprika
- 1 tsp black pepper
- ½ tsp salt
Optional Vegetables
- 3 carrots, cut into chunks
- 1½ lb baby potatoes
- 2 celery stalks, chopped
Method
1. Prepare the Beef
Pat the chuck roast dry with paper towels.
Season lightly with salt and black pepper on all sides.
2. Make the Garlic Herb Sauce
In a bowl, whisk together:
- Olive oil
- Worcestershire sauce
- Soy sauce
- Dijon mustard
- Balsamic vinegar
- Honey
- Minced garlic
- Thyme
- Rosemary
- Parsley
- Paprika
- Black pepper
- Salt
Mix until well combined.
3. Prepare the Slow Cooker
Place the sliced onion and optional vegetables in the bottom of the slow cooker.
Set the beef roast on top.
4. Add the Sauce
Pour the garlic-herb mixture generously over the roast.
Pour the beef broth around the sides of the roast rather than directly washing the seasoning off the top.
5. Slow Cook
Cover and cook:
- LOW: 7–8 hours
or - HIGH: 4–5 hours
The roast is ready when it becomes very tender and easily pulls apart with a fork.
6. Rest the Beef
Carefully remove the roast from the slow cooker and let it rest for 10–15 minutes.
This helps keep the meat juicy.
7. Make the Gravy
For a thicker gravy, transfer about 2 cups of the cooking liquid to a saucepan.
Mix:
- 2 tbsp cornstarch
- 3 tbsp cold water
Stir the slurry into the simmering cooking liquid and cook for 2–3 minutes, until thickened.
8. Serve
Slice or shred the beef and spoon the rich garlic-herb gravy over the top.
Serve with the cooked onions, carrots, and potatoes.
Cooking Tips
- Chuck roast works best because its marbling becomes tender during slow cooking.
- Searing the beef before slow cooking adds extra depth of flavor.
- Don’t add too much extra liquid—the beef and vegetables release moisture as they cook.
- For a stronger garlic flavor, add a few whole garlic cloves around the roast.
- Let the roast rest before slicing.
- For the most tender result, cook until the beef is fork-tender, rather than relying only on the clock.
Serving Suggestions
Serve with:
- Mashed potatoes
- Roasted carrots
- Green beans
- Dinner rolls
- Buttered noodles
- Roasted potatoes
- Steamed vegetables
The rich cooking juices are especially delicious spooned over mashed potatoes.
Storage
Store leftover beef and gravy in an airtight container in the refrigerator for 3–4 days.
For longer storage, freeze the cooked beef with some of the gravy for up to 2–3 months.

FAQs
1. Can I use a different cut of beef?
Yes. Beef chuck is ideal, but brisket or a suitable pot-roast cut can also work.
2. Do I need to sear the roast first?
No, but searing adds a delicious browned flavor and improves the finished dish.
3. Can I add potatoes and carrots?
Absolutely. Add them underneath and around the roast so they cook in the flavorful juices.
4. Why is my roast tough?
If it is tough but not dry, it may simply need more cooking time. Chuck roast becomes tender as its connective tissue breaks down during slow cooking.
5. Can I make this without soy sauce?
Yes. Replace it with additional Worcestershire sauce or simply season with salt to taste.
6. Can I prepare the sauce ahead?
Yes. Mix the garlic-herb sauce up to a day ahead and keep it refrigerated until you’re ready to cook.
