Juicy chicken, sweet pineapple, colorful vegetables, and a glossy homemade teriyaki sauce all cooked together in individual foil packets. It’s an easy one-pan-style dinner with very little cleanup.

Ingredients

For the Chicken & Vegetables

  • 1½ lb (680 g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 yellow bell pepper, cut into bite-sized pieces
  • 1 small zucchini, sliced
  • ½ small red onion, sliced
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • ¼ tsp salt

Homemade Teriyaki Sauce

  • ½ cup low-sodium soy sauce
  • ¼ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, finely minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp cold water

For Garnishing

  • 1–2 green onions, thinly sliced
  • 1 tbsp sesame seeds
  • Extra pineapple chunks, optional
  • Red pepper flakes, optional

Instructions

1. Prepare the Teriyaki Sauce

In a small saucepan, combine:

  • Soy sauce
  • Pineapple juice
  • Honey or brown sugar
  • Rice vinegar
  • Sesame oil
  • Garlic
  • Ginger

Whisk together and bring to a gentle simmer over medium heat.

In a small bowl, mix cornstarch with 2 tbsp cold water until smooth.

Slowly whisk the cornstarch mixture into the simmering sauce.

Cook for about 1–2 minutes, stirring constantly, until the sauce becomes slightly thick and glossy.

Remove from the heat and let it cool for a few minutes.

2. Prepare the Chicken

Place the chicken pieces in a large bowl.

Add olive oil, garlic powder, black pepper, and a small amount of salt.

Toss well.

Don’t add too much salt, because soy sauce already contains plenty of sodium.

3. Prepare the Vegetables

Cut the bell peppers, zucchini, and red onion into similar-sized pieces.

Keep the pineapple pieces around the same size as the chicken so everything cooks evenly.

4. Prepare the Foil Packets

Preheat your oven to 400°F (200°C).

Cut 4 large sheets of heavy-duty aluminum foil.

Place another sheet of foil underneath each one if your foil is thin.

Lightly brush the center with a little olive oil.

5. Assemble the Packets

Divide the ingredients evenly between the four foil sheets.

For each packet, add:

  1. Chicken
  2. Bell peppers
  3. Zucchini
  4. Red onion
  5. Pineapple

Drizzle approximately 2–3 tablespoons of teriyaki sauce over each packet.

Toss the ingredients gently with your hands or a spoon so the sauce coats everything.

Important: Reserve some teriyaki sauce for serving later.

6. Seal the Foil Packets

Bring the long sides of the foil together over the food.

Fold and crimp the edges tightly.

Then fold the shorter ends upward to create a completely sealed packet.

Leave a little space inside the packet so steam can circulate.

7. Bake

Place the packets on a baking sheet.

Bake at 400°F (200°C) for approximately 20–25 minutes, depending on the size of the chicken pieces.

The chicken should reach an internal temperature of 165°F (74°C) in the thickest piece.

8. Open Carefully

Remove the packets from the oven and allow them to sit for about 3–5 minutes.

Carefully open the foil because hot steam will escape.

9. Finish the Dish

Drizzle the reserved teriyaki sauce over the chicken and pineapple.

Sprinkle with:

  • Sliced green onions
  • Sesame seeds
  • Optional red pepper flakes

Serve immediately.

 Serving Ideas

These foil packets are delicious served with:

  • Steamed white rice
  • Brown rice
  • Coconut rice
  • Cauliflower rice
  • Quinoa
  • Asian-style cucumber salad

You can also serve the chicken and pineapple directly from the opened foil packet.

 Grill Version

You can also cook the packets on a grill.

  • Preheat grill to medium-high heat.
  • Place sealed packets on the grill.
  • Cook for approximately 15–20 minutes, turning carefully halfway through.
  • Check the chicken with a food thermometer and make sure it reaches 165°F (74°C).

💡 Tips for the Best Foil Packets

  • Chicken thighs stay especially juicy, while chicken breast is leaner.
  • Fresh pineapple gives the best texture, but canned pineapple can also be used after draining well.
  • Don’t cut the chicken pieces too large or they may take longer to cook than the vegetables.
  • Don’t overfill the foil packets.
  • For extra caramelized flavor, open the packets during the final few minutes and allow the chicken to brown slightly, while ensuring it reaches 165°F/74°C.
  • Add sesame seeds and green onions after cooking for the freshest flavor.

 Storage & Reheating

Cool leftovers promptly and refrigerate them in a covered container.

  • Refrigerator: up to 3–4 days
  • Freezer: up to 2 months for best quality

Reheat until the chicken is steaming hot throughout.

Q&A

Q: Can I use chicken thighs?
Yes. Boneless, skinless chicken thighs work very well and tend to remain juicy.

Q: Can I use bottled teriyaki sauce?
Absolutely. Use about ¾–1 cup, depending on how saucy you want the packets.

Q: Can I add broccoli?
Yes. Small broccoli florets work nicely. If the florets are large, cut them smaller so they cook evenly.

Q: Can I make these ahead of time?
You can prepare the chicken, vegetables, and sauce ahead of time and refrigerate them separately. Assemble the packets shortly before cooking.

Q: Can I use frozen pineapple?
Yes, but thaw and drain it first so excess moisture doesn’t make the packets watery.

Q: How do I know the chicken is fully cooked?
The safest method is a food thermometer: the thickest piece should reach 165°F (74°C).
