These easy no-bake almond cranberry bars are chewy, nutty, lightly sweet, and packed with oats and dried cranberries. The recipe is based on the ingredients shown in your image.
Yield: 8–10 bars
Prep Time: 10 minutes
Chill Time: 1–2 hours
Total Time: About 1½ hours
Ingredients
- 1 cup (140 g) almonds, roughly chopped
- ½ cup (45 g) rolled oats
- ¼ cup (35–40 g) dried cranberries
- 2 tbsp honey
- 1 tsp vanilla extract
- Pinch of salt, optional
Optional for better binding
The 2 tbsp honey in the photo may not be enough to firmly bind all the ingredients. For sturdier bars, use:
- ¼ cup (80 g) honey, instead of 2 tbsp
Instructions
1. Toast the almonds and oats
Place the chopped almonds and oats in a dry skillet over medium-low heat.
Toast for 3–5 minutes, stirring frequently, until lightly golden and fragrant.
Be careful not to burn the almonds.
Remove from the heat and allow them to cool slightly.
2. Warm the honey
Add the honey to a small saucepan over low heat.
Warm for about 1–2 minutes until it becomes runny.
Remove from the heat and stir in the vanilla and a pinch of salt.
3. Combine everything
Place the toasted almonds and oats in a large bowl.
Add the dried cranberries.
Pour the warm honey mixture over everything.
Stir thoroughly until the ingredients are evenly coated.
4. Press into a pan
Line an 8 × 8-inch (20 × 20 cm) pan with parchment paper.
Transfer the mixture to the pan.
Using the back of a spoon, spatula, or another piece of parchment paper, press the mixture down very firmly into an even layer.
This step is important for bars that hold together.
5. Chill
Refrigerate for at least 1–2 hours, or until firm.
6. Slice
Lift the chilled mixture out using the parchment paper.
Cut into 8–10 bars or squares with a sharp knife.
Tips for Bars That Don’t Fall Apart
- Press the mixture very firmly into the pan.
- Don’t skip the chilling step.
- Chop the almonds fairly small.
- If the mixture seems dry after mixing, add 1–2 additional teaspoons of honey.
- For softer, chewier bars, use the larger amount of honey.
- Keep the finished bars refrigerated if your kitchen is warm.

Recipe Q&A
Can I use whole almonds?
Yes. Chop them into smaller pieces so the bars hold together better.
Can I use quick oats?
Yes, although rolled oats provide a slightly chewier texture.
Why are my bars crumbly?
The mixture may not have enough binder or wasn’t pressed firmly enough. Add a little more warm honey and press the mixture firmly into the pan.
Can I bake these bars?
Yes, but this particular version is designed as a no-bake bar. Baking isn’t necessary.
Can I use maple syrup instead of honey?
Yes, although honey generally gives the mixture a firmer, stickier texture.
How should I store them?
Store in an airtight container in the refrigerator for approximately 5–7 days.
Can I freeze them?
Yes. Wrap individual bars and freeze for up to about 2 months. Thaw in the refrigerator before serving.
Are these breakfast bars?
They can be enjoyed as a snack or part of breakfast, but they’re not intended to replace a complete balanced meal.
