Ingredients

  • 2 lb (900 g) beef chuck roast, cut into large chunks

  • 1½ lb (680 g) baby potatoes, halved if large

  • 1 lb (450 g) carrots, peeled and sliced

Instructions

1. Season the beef: Pat the beef dry with paper towels. Season with salt, black pepper, onion powder, and paprika.

2. Prepare the vegetables: Wash the baby potatoes and cut large ones in half. Peel and slice the carrots into thick rounds. Place them in the bottom of the slow cooker.

3. Sear the beef (optional): Heat olive oil in a skillet over medium-high heat. Brown the beef for 2–3 minutes per side for extra flavor.

4. Make the garlic butter: Melt the butter in a small saucepan. Add minced garlic, thyme, rosemary, and Italian seasoning. Cook for 30–60 seconds until fragrant.

5. Assemble: Arrange the beef over the potatoes and carrots. Pour the garlic-herb butter over everything, then add the beef broth around the sides.

6. Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender and the vegetables are soft.

7. Thicken the gravy (optional): Mix cornstarch and cold water until smooth. Stir into the cooking liquid and cook on HIGH for another 15–20 minutes, until thickened.

8. Serve: Taste the gravy and adjust the salt and pepper. Serve the tender beef with potatoes, carrots, and plenty of garlic butter gravy.
