Broiled tomatoes with fresh thyme, basil and grated Parmesan cheese are the deliciously simple side dish that pair well with everything from fish, to chicken, to pork, beef and grilled burgers.

  • Preheat broiler lightly spray a broiler pan (or broiler rack) with nonstick spray.
  • In a large bowl, add the tomatoes, thyme, oil, salt and pepper and toss to coat.
  • Place the tomatoes, cut side up, on prepared pan. Broil (about 6 inches from heat) until tomatoes soften and begin to char slightly, about 10 – 12 minutes.
  • Arrange tomatoes on a large plater and sprinkle with Parmesan cheese and chopped basil.
  • Serve hot, warm or at room temperature.
  • Store any leftovers in an airtight container in the refrigerator.

Recipe Notes

If you don’t have fresh herbs, you can toss the tomatoes with 1 teaspoon dried thyme and 1 teaspoon of dried basil before broiling. The flavor won’t be the same, but the tomatoes will still be delicious.
