Roasted Carrots with Whipped Ricotta and Hot Honey
Ingredients:
For the Carrots:
12 carrots, sliced lengthwise
1 tablespoon olive oil
1/2 teaspoon salt
1 1/2 teaspoons fresh thyme
1 1/2 teaspoons hot honey
For the Whipped Ricotta:
2/3 cup ricotta cheese
1 tablespoon olive oil
1 teaspoon lemon zest
1 teaspoon lemon juice
Salt to taste
Instructions:
Preheat Oven: Preheat oven to 425°F (220°C).
Prepare Carrots: Toss carrots with olive oil, salt, and thyme. Spread on a baking sheet.
Roast Carrots: Roast for 20-30 minutes, or until tender and slightly caramelized.
Make Whipped Ricotta: In a food processor, combine ricotta, olive oil, lemon zest, lemon juice, and salt. Pulse until smooth.
Assemble Dish: Arrange roasted carrots on a plate. Top with dollops of whipped ricotta and drizzle with hot honey.
Tips:
For a spicier dish, add more hot honey or red pepper flakes to the carrots.
You can use different herbs, such as rosemary or oregano.
